Emily Dickenson's Coconut Cake

Coconut Cake (sorry, no picture)
Yes, this is really (according to NPR) Emily Dickenson's recipe

1 cup coconut
2 cups flour
1 cup sugar
1/2 cup butter
1/2 cup milk
2 eggs
1/2 t. soda
1 t. cream of tartar

I let the butter soften at room temperature.
Then, I literally dumped all the ingredients into a mixing bowl....none of that mix the dry together, then add this, then add that. DUMP IT ALL IN. It works.
Use the butter wrapper to butter your 9X13 pan (I used a glass "casserole" dish).
Bake at 350 degrees for 30 minutes.

This is lightly sweet...think, sweet cornbread. Using gluten-free flour and soymilk worked well. I would imagine that regular flour would make a slightly less crumbly cake, but the GF version was just fine.
