I Damn Near Cried...

....it was soooo good!

A couple of years ago I was tested for every thing under the gastro-intestinal sun and then told nothing was wrong with me. Right. So I suffered with gastro problems for the last two years that were getting steadily worse until it began to disrupt my life, as in I couldn't drive 45 minutes to the city without being in distress and worrying about the availability of a potty at every stop.

Last February, I decided that although I did not have celiac and according to Doogie Howser MD nothing was wrong with me, it sure seemed like I was having a problem with wheat or gluten (since pasta was a killer). I eliminated it all from my diet. On the three occasions since then, the last time just a few days ago, that I have eaten anything with gluten I have been sick later. Yesterday it was just like old times.....sick, and I'll spare you the details.

Now, you know I'm frequently disappointed in my garden and if you know me well you know that I try and try to grow tomatoes with little success. This year I've harvested THREE fabulous tomatoes, so talk turned to tomato and mayo on white bread sandwiches. Bread is the thing I miss the most and the thought of that sandwich...ai yi yi. With the last bout of "gluten sickness" fresh in my mind there was no way I was going to eat gluten any time soon. I had bought some gluten free bread that, true to gf bread's reputation, fell to pieces if you looked at it hard. So, I researched it and found that everyone out in the vast internet world, hands down, thought UDI'S bread was the best.

Today we made a trip, an hour away to Whole Foods where they carry Udi's. I bought a loaf and within 15 minutes of arriving home (the groceries aren't even all put away yet) I made myself a tomato and mayo sandwich on Udi's white bread and I. almost. cried. I. am. not. kidding.

Damn good sandwich!
